Baby Food Steam Processor

When making baby food, why can not I leave the peels of fruits and vegetables?
I understand why, if the fruit has a hard, especially (broccoli) shell, or if the skin is very dirty (potatoes, beets), but for something like fresh carrots, potatoes or red skin, if you're boiling or steaming and throw them in the food processing anyway, do not wash well and remove the top and low enough? Especially if they are organic? I always heard that many of the most nutritious vegetables is in or adjacent to the shell. But books of baby food and websites say to peel provided food. What do you think? Our baby is not born yet, it just something I'm curious about the future.
I understand to be a hard shell to digest, but what prunes are baby food joint? It is too difficult to digest (and therefore the impact). Or when the infant prunes are constipated, not a thing normal?
I suppose I could be more difficult to digest, but I see what is said about carrots and red potatoes. I do not think that would probably be fine skin peeling vegetables.
