Help vegan cake?

My birthday is coming this week and hope to develop a hazelnut cake chocolate. I first tried this weekend (to get to work) and although my hazelnut ganache turned out great and cover with the wonderful cake (despite my efforts) n are mixed and sufficient for more than two layers. I am a vegan baker enough experience, but as I used to cook only for me and my roommates, I accepted that my vegan cake would be more despicable than non-vegans. But I would like to make a cake slightly distorted elegant and wondered if the bakers have tips for achieving a cohesion that allows this. I can use an egg substitute (arrowroot instead of the plain) and put my blood sugar more raw vegan cooking for the robot (to more than table sugar), but everything else is a standard recipe for chocolate cake. Thank you in advance!

Looks like you need more moisture. Do you use alternative energy egg-g? If so, I suspect the problem may be that the cake is too dry (because the amount of moisture Ener-G egg is smaller than a normal egg) or you are not a substitute for whipped egg to full potential binding and very fluffy. If the first problem, then try to use a different egg substitute for eggs in half of the recipe, and Ener-G for the other half. Ideas: 1 / 4 cup of tofu, blend until super smooth, 1 / 4 cup applesauce (if the chocolate cake, you will not know what subject.) If the second problem, whisk egg substitute more. It should puff up many times its original volume and look fluffy. If you have a drummer Electric hand, use it. Otherwise, what I do: put the eggs "in a cup, put a whip in the glass, then put your hands, palms up, flat (a bit like the way people hold hands to pray). Then turn the handle of the flapping hands as quickly as possible. This leads to the mixer moves much faster than in hand is simply to roll forward and back hands, it is not necessary to move the whole arm with every movement. I hope this description has no meaning, yes, please say so and I'll try again. In addition, you can pass an order different. I was very lucky with this http://vegweb.com/index.php?topic=6686.0, especially with some chocolate chips or pieces thrown mixture. Small and made for a marriage full of non-vegan and went well. If you want to continue with the recipe that you, could you publish it? This could help people make more specific proposals. Good luck!
